Ingredients:
- 1/2 cup oats
- 1/2 banana
- 1 egg substitute
- 1/4 cup plant-based milk of choice
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- Pinch sea salt
- 2 tbsp chocolate chips (for topping)
Instructions:
- Preheat the oven to 350°F.
- Lightly coat an oven-safe mug, ramekin or baking dish with oil.
- Make the egg substitute (1 tbsp egg replacer powder + 2 tbsp water, let sit for 1 minute).
- Add all ingredients (except chocolate chips) oats, banana, egg substitute, plant-based milk, maple syrup, vanilla extract, baking soda and sea salt to a blender and blend until fully combined.
- Pour batter into the prepared baking dish. Top with chocolate chips.
- Bake for about 20 minutes.
- Top with flakey sea salt, let cool and enjoy!
