Ingredients
- 4 large spinach or whole wheat tortillas
- 1/2 cup dairy-free cream cheese*
- 1/4 cup hummus
- 1/2 cup shredded carrots
- 1/2 cup thinly sliced cucumber
- 1/2 cup thinly sliced red bell pepper
- 1/4 cup shredded purple cabbage
- 1/4 avocado, sliced thin
- Optional: sprinkle of everything bagel seasoning
Instructions
- Lay each tortilla flat on a clean surface.
- Spread a thin layer of dairy-free cream cheese, then add a layer of hummus.
- Arrange the veggies in colorful stripes across the tortilla.
- Carefully roll the tortilla tightly into a log.
- Slice into 1-inch pinwheels and serve.
