Soft, cozy and filled with the flavors of fall, these mini apple cider donuts are the perfect way to welcome September. Little bakers will love mixing the batter, filling the donut pan and rolling the warm donuts in cinnamon sugar. They’re just the right size for breakfast, after-school snacks or weekend baking with the family. Grab your apron, little chefs โ it’s donut time!
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 1/4 cup unsweetened applesauce
- 1/4 cup apple cider
- 1/4 cup brown sugar
- 2 tablespoons melted vegan butter or coconut oil
- 1 teaspoon vanilla extract
For the Cinnamon Sugar
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons melted vegan butter
Instructions
- Preheat the oven to 350ยฐF. Lightly grease a mini donut pan.
- In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg and salt.
- In another bowl, stir together the applesauce, apple cider, brown sugar, melted vegan butter and vanilla.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spoon or pipe the batter into the donut pan, filling each mold about three-quarters full.
- Bake for 10-12 minutes, or until the donuts spring back when gently touched.
- Let the donuts cool for a few minutes. Brush each one with melted vegan butter, then roll in the cinnamon sugar mixture.
- Serve warm and enjoy!
Notes: No mini donut pan? Use a mini muffin pan instead to make delicious apple cider donut bites. Kids can help stir the batter, decorate the finished donuts or even package them as sweet homemade gifts for teachers or neighbors.
