Berry Sweet Mother’s Day Shortcake Cups

These berry shortcake cups are the perfect Mother’s Day treat for little helpers to make! They’re colorful, a little messy (in the fun way), and feel fancy without being hard to put together. Kids can help layer, scoop and decorate each cup just for Mom. It’s like building a mini-dessert masterpiece! The soft cake, fluffy cream and juicy berries come together in the sweetest way — and the best part is sharing something made with love. Ready to create a treat Mom won’t forget? Let’s get started!

Ingredients:

  • 2 cups store-bought pound cake or sponge cake, cut into cubes
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup whipped cream (store-bought or homemade)
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Fresh mint leaves (optional, for decoration)

Directions:

  1. In a small bowl, mix the strawberries with sugar and vanilla extract. Let them sit for about 10 minutes until juicy.
  2. In clear cups or small bowls, add a layer of cake cubes on the bottom.
  3. Spoon a layer of strawberries and blueberries over the cake.
  4. Add a layer of whipped cream on top.
  5. Repeat the layers until the cup is full.
  6. Finish with a dollop of whipped cream and a few berries on top. Add a mint leaf if you want to make it extra pretty.
  7. Serve right away and enjoy!
