Be My Valentine Sugar Cookies

These beloved sugar cookies are the perfect way to spread a little love this Valentine’s Day! A fun and easy activity for the whole family, these cookies are light, tender and just sweet enough to satisfy any craving. Let the kids roll, cut and decorate while you make memories that will last long after the cookies are gone. Whether you’re gifting them to a Valentine or your little one is sharing them at school lunch, these healthy, vegan and gluten-free treats are the sweetest way to celebrate the season of love. So grab those aprons, fire up the oven and let the baking fun begin, little chefs!

Ingredients:

  • 1/2 cup (1 stick) softened vegan butter
  • 1/2 cup sugar
  • 2 tbsp vegan egg powder
  • 8 tbsp cold almond milk
  • 1/2 tsp vanilla extract
  • 1 1/2 cup gluten-free 1 to 1 flour

Instructions:

  1. In a small bowl or shallow cup, mix the egg replacement powder and almond milk, let sit for 5 minutes.
  2. In a mixer, mix together vegan butter and sugar until combined.
  3. Add egg replacement powder and vanilla extract to butter and sugar mixture (mix well).
  4. Gradually stir in flour until fully combined.
  5. Refrigerate the dough in the fridge for 1 hour.
  6. Preheat the oven to 350.
  7. Roll out dough on a lightly floured surface and cut out desired cookie shapes with lightly floured cookie cutters. Make sure to keep flouring the rolling pin to prevent any dough from sticking to it.
  8. Place cut dough shapes on an ungreased baking sheet.
  9. Bake for 10-12 minutes. Cookies should be slightly warm in color but not golden brown as this makes a crispy cookie instead of buttery soft.
  10. Let the cookies cool completely then frost with a fixture of powdered sugar and almond milk. Decorate as desired with different food coloring and sprinkles.
  11. Serve and enjoy!
