This apple puff pastry tart is a perfect fall recipe for kids to join in on. It’s super simple, but looks amazing when it’s done — like something you’d see at a bakery, but made by your little chefs. There’s slicing, sprinkling and even a little brushing with shiny jam at the end. It’s a fun way to get the family involved in the kitchen and enjoy some hands-on time together. Ingredients:
- 2 pounds (4 large) baking apples
- ½ cup sugar
- 1 teaspoon cinnamon
- 2 teaspoons lemon juice
- 2 tablespoons vegan butter, melted and cooled
- 1 sheet puff pastry (most are vegan) approx. 9″ × 14,″ thawed
- Extra sugar for sprinkling
- 2 tablespoons non-dairy cream or milk
- ½ cup apricot jam
Directions:
- Preheat oven to 375°F.
- Halve and core the apples, then slice them into thin pieces.
- In a small bowl melt the butter and mix in sugar, cinnamon and lemon juice. Toss apples in the mixture until fully coated.
- On a parchment lined baking tray lay the puff pastry sheet. Add apples in the center, leaving a border, and fold edges over to create a border. If there is extra sugar mixture, pour it on top. Chill for 15 minutes in the fridge.
- Prick dough edges with a fork, brush with non-dairy cream or milk, and sprinkle with sugar.
- Bake for 45-50 minutes, until golden and crispy. If browning too fast, cover the edges loosely with foil.
- Heat up the apricot jam then spread/pour into the middle of the baked pastry.
- Slice and serve!
