Ingredients:
- 1/2 cup (1 stick) softened vegan butter
- 1/2 cup sugar
- 2 tbsp vegan egg powder
- 8 tbsp cold almond milk
- 1/2 tsp vanilla extract
- 1 1/2 cup gluten-free 1 to 1 flour
Instructions:
- In a small bowl or shallow cup, mix the egg replacement powder and almond milk, let sit for 5 minutes.
- In a mixer, mix together vegan butter and sugar until combined.
- Add egg replacement powder and vanilla extract to butter and sugar mixture (mix well).
- Gradually stir in flour until fully combined.
- Refrigerate the dough in the fridge for 1 hour.
- Preheat the oven to 350.
- Roll out dough on a lightly floured surface and cut out desired cookie shapes with lightly floured cookie cutters. Make sure to keep flouring the rolling pin to prevent any dough from sticking to it.
- Place cut dough shapes on an ungreased baking sheet.
- Bake for 10-12 minutes. Cookies should be slightly warm in color but not golden brown as this makes a crispy cookie instead of buttery soft.
- Let the cookies cool completely then frost with a fixture of powdered sugar and almond milk. Decorate as desired with different food coloring and sprinkles.
